Instructions
- Prepare a large sheet pan lined with waxed or parchment paper.
- Slice the green tomatoes into ½-inch thick rounds and let them drain on paper towels.
- In a shallow bowl, whisk together the protein powder and oat fiber for the dredging mixture (if using).
- In another shallow bowl, mix the ingredients for the keto breadcrumb coating.
- Beat the eggs in a separate shallow bowl.
- Dredge each tomato slice in the protein powder/oat fiber mixture, then dip in the beaten egg, and finally coat with the breadcrumb mixture.
- Heat a non-stick or cast iron frying pan over medium heat and add olive oil.
- Fry the tomato slices until golden brown on both sides, adding more oil as needed.
- Remove the fried tomatoes and let them drain on a paper towel or cooling rack.
- Serve with a dipping sauce of your choice.
