Ingredients

The tomatoes

  • 1 pound green tomatoes, sliced

The egg mixture

  • 2 large eggs, beaten

The frying oil

  • 3 tablespoons olive oil

The dredging mixture (optional)

  • 1 tablespoon oat fiber
  • 1 tablespoon whey protein powder

The keto breadcrumb coating

  • 1 cup crushed pork rinds
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon granulated garlic
  • ¼ teaspoon onion powder

Instructions

  1. Prepare a large sheet pan lined with waxed or parchment paper.
  2. Slice the green tomatoes into ½-inch thick rounds and let them drain on paper towels.
  3. In a shallow bowl, whisk together the protein powder and oat fiber for the dredging mixture (if using).
  4. In another shallow bowl, mix the ingredients for the keto breadcrumb coating.
  5. Beat the eggs in a separate shallow bowl.
  6. Dredge each tomato slice in the protein powder/oat fiber mixture, then dip in the beaten egg, and finally coat with the breadcrumb mixture.
  7. Heat a non-stick or cast iron frying pan over medium heat and add olive oil.
  8. Fry the tomato slices until golden brown on both sides, adding more oil as needed.
  9. Remove the fried tomatoes and let them drain on a paper towel or cooling rack.
  10. Serve with a dipping sauce of your choice.
