Fried Green Tomato BLTs

red tomatoes, sliced ½ inch thick
Instructions
- Preheat the oven to 400 degrees.
- Coat a baking sheet fitted with a wire rack with cooking spray and set aside.
- Prepare a breading station with flour, beaten eggs, and a mixture of breadcrumbs and cornmeal in separate shallow bowls.
- Season each bowl with salt, black pepper, and cayenne, stirring to combine.
- Dip the green tomato slices in flour, then egg, and finally the breadcrumb mixture.
- Line the breaded tomatoes on the baking rack, coat with cooking spray, and bake for 10 minutes.
- Flip the tomatoes, coat the other side with cooking spray, and bake for another 10 minutes.
- Optionally, broil for 2 minutes on each side until browned and crispy.
- Cook bacon in a skillet until crispy and drain on paper towels.
- Toast the sourdough bread and spread mayonnaise on one side of each slice.
- Assemble the sandwiches with lettuce, fried green tomatoes, bacon, and red tomato slices, then top with another slice of bread.
