Ingredients

The fried green tomatoes

  • 2 large green tomatoes, sliced ½ inch thick
  • 1 teaspoon coarse salt, divided + more for sprinkling
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • ½ cup panko breadcrumbs
  • ¼ cup yellow cornmeal
  • ½ teaspoon ground black pepper, divided
  • Pinch cayenne pepper, divided

The BLTs

  • 12 slices uncured bacon
  • 8 slices sourdough bread
  • ¼ cup mayonnaise
  • 4 pieces green leaf or bibb lettuce
  • 2 ripe red tomatoes, sliced ½ inch thick

Instructions

  1. Preheat the oven to 400 degrees.
  2. Coat a baking sheet fitted with a wire rack with cooking spray and set aside.
  3. Prepare a breading station with flour, beaten eggs, and a mixture of breadcrumbs and cornmeal in separate shallow bowls.
  4. Season each bowl with salt, black pepper, and cayenne, stirring to combine.
  5. Dip the green tomato slices in flour, then egg, and finally the breadcrumb mixture.
  6. Line the breaded tomatoes on the baking rack, coat with cooking spray, and bake for 10 minutes.
  7. Flip the tomatoes, coat the other side with cooking spray, and bake for another 10 minutes.
  8. Optionally, broil for 2 minutes on each side until browned and crispy.
  9. Cook bacon in a skillet until crispy and drain on paper towels.
  10. Toast the sourdough bread and spread mayonnaise on one side of each slice.
  11. Assemble the sandwiches with lettuce, fried green tomatoes, bacon, and red tomato slices, then top with another slice of bread.
