Ingredients

Green Goddess Mayo

  • 1 cup mayonnaise of choice
  • 2 cups basil, chopped
  • ½ cup chives, chopped
  • ½ cup parsley, chopped
  • ¼ cup tarragon
  • 4 filets anchovy
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly cracked pepper
  • 2 tablespoons lemon juice

The Sandwich

  • 1 pound thick-cut bacon
  • 1 head lettuce of choice
  • 2 pieces heirloom or beefsteak tomatoes
  • 1 loaf bread

Instructions

  1. Prepare the Green Goddess mayo by blending all mayo ingredients until smooth.
  2. Preheat the oven to 400°F and line a baking sheet with foil.
  3. Bake the bacon until crispy, about 15 to 20 minutes, depending on thickness.
  4. Slice the tomatoes and sprinkle with salt to draw out moisture.
  5. Toast the bread lightly and spread green goddess mayo on both halves.
  6. Assemble the sandwich with bacon, lettuce, and tomatoes, then cut in half and serve.
