Vegetarian BLT Sandwich

Ingredients

The sandwich

  • 4 slices sourdough bread
  • 2 medium-to-large ripe red tomatoes
  • 6 ounces halloumi cheese
  • ΒΌ cup extra-virgin olive oil
  • 6 tablespoons mayonnaise
  • 6 leaves tender green lettuce

Seasoning

  • to taste flaky sea salt or kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Toast the slices of bread lightly and set aside.
  2. Slice the tomatoes into thick rounds and sprinkle with salt.
  3. Cut the halloumi into strips and pat dry to remove moisture.
  4. Heat olive oil in a skillet over medium heat until warm.
  5. Add halloumi slices to the skillet and cook until golden on both sides.
  6. Remove cooked cheese and sprinkle with black pepper.
  7. Spread mayonnaise on the toasted bread slices.
  8. Layer lettuce, tomatoes, and halloumi on the bread, then top with remaining bread.
  9. Serve immediately or refrigerate for up to 24 hours.
