Ingredients

  • 6 slices thick-cut bacon
  • 4 to 8 leaves tender green lettuce
  • 1 ripe heirloom tomato
  • 2 teaspoons red wine vinegar
  • to taste Kosher salt
  • to taste ground black pepper
  • 4 slices whole wheat bread
  • 4 tablespoons nonfat plain Greek yogurt
  • ½ ripe avocado

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with foil.
  2. Place a wire rack on the baking sheet, coat with non-stick spray, and arrange the bacon on the rack.
  3. Bake the bacon for 15 to 25 minutes until crisp, then transfer to a paper towel-lined plate.
  4. Drizzle the tomato slices with red wine vinegar and season with salt and pepper.
  5. Toast the bread slices in the oven for about 5 minutes, flipping halfway through.
  6. Spread Greek yogurt on two slices of toasted bread.
  7. Layer lettuce, tomato, and bacon on top of the yogurt-covered bread.
  8. Add avocado slices and sprinkle with additional salt and pepper.
  9. Top with the remaining slices of bread, cut in half, and serve.
