Instructions
- Preheat the oven to 400°F and line a baking sheet with foil.
- Place a wire rack on the baking sheet, coat with non-stick spray, and arrange the bacon on the rack.
- Bake the bacon for 15 to 25 minutes until crisp, then transfer to a paper towel-lined plate.
- Drizzle the tomato slices with red wine vinegar and season with salt and pepper.
- Toast the bread slices in the oven for about 5 minutes, flipping halfway through.
- Spread Greek yogurt on two slices of toasted bread.
- Layer lettuce, tomato, and bacon on top of the yogurt-covered bread.
- Add avocado slices and sprinkle with additional salt and pepper.
- Top with the remaining slices of bread, cut in half, and serve.
