BLT Stuffed Avocado

Ingredients

  • 4 medium Avocado
  • 4 slices Bacon
  • 1 cup Grape tomatoes (halved)
  • 1 cup Romaine lettuce (chopped)
  • 2 tsp Lime juice
  • ½ tsp Garlic powder
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

Instructions

  1. Cook the bacon in a cold skillet over medium heat until crispy, then drain on paper towels.
  2. Slice the avocados in half, remove the pits, and scoop out half of the flesh into a bowl.
  3. Mash the avocado flesh with lime juice, garlic powder, and sea salt.
  4. Fold in the grape tomatoes and chopped romaine lettuce.
  5. Chop the cooked bacon and add it to the avocado mixture.
  6. Scoop the mixture back into the avocado halves and serve.
