Ingredients

Salad Fixings

  • 1 pound romaine lettuce
  • 8 slices bacon
  • 1 whole avocado
  • 8 ounces grape tomatoes

Mayo Dressing

  • ¾ cup mayonnaise
  • 1 ½ tablespoons white or cider vinegar or lemon
  • 2 ½ tablespoons erythritol powdered

Instructions

  1. Cook the bacon and crumble it.
  2. Halve the grape tomatoes and cube the avocado.
  3. Mix all dressing ingredients in a small bowl until well combined.
  4. For whole-leaf presentation, wash and dry romaine leaves, divide among plates, and spread dressing on leaves. Top with bacon, tomatoes, and avocado.
  5. For a chopped presentation, cut romaine into pieces, toss with dressing in a bowl, and divide among plates. Top with bacon, tomatoes, and avocado.
