Ingredients

The tomatoes

  • 1 unit firm green tomato

The batter

  • 1 large egg
  • ¼ cup all-purpose flour
  • ½ cup cornmeal
  • ¼ cup bread crumbs

  • a pinch cayenne pepper
  • a pinch black pepper

The sandwich

  • 4 slices bread
  • ½ cup shredded cheddar cheese
  • ½ recipe Pimento cheese

Instructions

  1. Slice the green tomatoes into ¼-inch thick slices and sprinkle with salt to drain.
  2. Prepare three bowls: one with flour, one with a mixture of cornmeal, bread crumbs, salt, cayenne, and black pepper, and one with a whisked egg.
  3. Heat oil in a pan over medium heat.
  4. Dip tomato slices in flour, then egg, and finally in the bread crumb mixture, ensuring they are fully coated.
  5. Fry the tomatoes in the hot oil for about 1 minute on each side until golden brown, then drain on paper towels.
  6. Assemble the grilled cheese by spreading pimento cheese on each slice of bread, adding fried tomatoes and shredded cheddar, then topping with another slice of bread.
  7. In a pan, melt butter and grill the sandwich until crispy and golden brown on both sides, covering to melt the cheese.
  8. Slice the sandwiches in half and serve.
