Instructions
- Slice the green tomatoes into ¼-inch thick slices and sprinkle with salt to drain.
- Prepare three bowls: one with flour, one with a mixture of cornmeal, bread crumbs, salt, cayenne, and black pepper, and one with a whisked egg.
- Heat oil in a pan over medium heat.
- Dip tomato slices in flour, then egg, and finally in the bread crumb mixture, ensuring they are fully coated.
- Fry the tomatoes in the hot oil for about 1 minute on each side until golden brown, then drain on paper towels.
- Assemble the grilled cheese by spreading pimento cheese on each slice of bread, adding fried tomatoes and shredded cheddar, then topping with another slice of bread.
- In a pan, melt butter and grill the sandwich until crispy and golden brown on both sides, covering to melt the cheese.
- Slice the sandwiches in half and serve.
