Strawberry Honey Jam

Ingredients

  • 6 pounds strawberries (or blueberries or other ripe fruit)
  • cups honey
  • apples unpeeled and grated
  • tablespoons lemon juice (freshly squeezed)

Instructions

  1. Rinse the berries and remove any spoiled ones, hull strawberries and slice them in half.
  2. Combine the berries, honey, grated apple, and lemon juice in a large pot over high heat.
  3. Once boiling, reduce to medium heat and simmer for 30 to 60 minutes, stirring occasionally.
  4. Mash the fruit with a potato masher as it softens.
  5. While cooking, sterilize jars and lids in boiling water.
  6. Once the jam is ready, ladle it into the sterilized jars, leaving ¼ inch headspace.
  7. Seal the jars with lids and process in boiling water for 10 minutes.
  8. Remove jars and let them cool, ensuring the lids have sealed properly.
