Strawberry Honey Jam

strawberries (or blueberries or other ripe fruit)

lemon juice (freshly squeezed)
Instructions
- Rinse the berries and remove any spoiled ones, hull strawberries and slice them in half.
- Combine the berries, honey, grated apple, and lemon juice in a large pot over high heat.
- Once boiling, reduce to medium heat and simmer for 30 to 60 minutes, stirring occasionally.
- Mash the fruit with a potato masher as it softens.
- While cooking, sterilize jars and lids in boiling water.
- Once the jam is ready, ladle it into the sterilized jars, leaving ¼ inch headspace.
- Seal the jars with lids and process in boiling water for 10 minutes.
- Remove jars and let them cool, ensuring the lids have sealed properly.
