Bacon, Pork & Guinness Cassoulet

navy beans, drained and rinsed

Guinness Beer or another Porter Style Beer

Instructions
- 1. Preheat the grill to medium direct cooking at approximately 350°F.
- 2. Prepare ingredients: chop bacon, carrots, celery, and garlic; slice pork tenderloin and onion, and halve tomatoes.
- 3. Place a cast iron pan on one half of the grill and add bacon to render fat.
- 4. Grill the pork tenderloin until char marks form, then remove.
- 5. Grill tomatoes and onions until charred, then remove.
- 6. In the dutch oven, add carrots and celery to the rendered bacon fat and cook.
- 7. Add grilled onions and tomatoes, then garlic, and stir frequently.
- 8. Deglaze with the first Guinness beer, then add brown sugar and stir.
- 9. Chop the grilled pork and add to the dutch oven, along with the beans and thyme.
- 10. Let the cassoulet simmer for 10 minutes or until the liquid reduces.
- 11. Slice the French bread, slather with butter, and grill quickly for marks.
- 12. Serve the cassoulet with the grilled bread.
