Bacon, Pork & Guinness Cassoulet

Ingredients

  • 1 lb Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet, sliced into ½” thick pieces
  • ½ lb bacon, chopped into ½ inch pieces
  • 2 15 oz cans navy beans, drained and rinsed
  • 1 15 oz can kidney beans
  • 1 medium sweet onion, sliced into rings
  • 4 medium tomatoes, sliced in half
  • 2 medium carrots, chopped
  • 2 sticks celery, chopped
  • 2 cloves garlic, chopped
  • 1 large bunch thyme
  • 1–2 cans Guinness Beer or another Porter Style Beer
  • 2 tbsp brown sugar
  • 1 loaf French Bread
  • to taste Compound Butter (herbed butter)

Instructions

  1. 1. Preheat the grill to medium direct cooking at approximately 350°F.
  2. 2. Prepare ingredients: chop bacon, carrots, celery, and garlic; slice pork tenderloin and onion, and halve tomatoes.
  3. 3. Place a cast iron pan on one half of the grill and add bacon to render fat.
  4. 4. Grill the pork tenderloin until char marks form, then remove.
  5. 5. Grill tomatoes and onions until charred, then remove.
  6. 6. In the dutch oven, add carrots and celery to the rendered bacon fat and cook.
  7. 7. Add grilled onions and tomatoes, then garlic, and stir frequently.
  8. 8. Deglaze with the first Guinness beer, then add brown sugar and stir.
  9. 9. Chop the grilled pork and add to the dutch oven, along with the beans and thyme.
  10. 10. Let the cassoulet simmer for 10 minutes or until the liquid reduces.
  11. 11. Slice the French bread, slather with butter, and grill quickly for marks.
  12. 12. Serve the cassoulet with the grilled bread.
