Ingredients

The main dish

  • 1 pound dried great northern beans
  • 5-6 cups water
  • 2 sprigs thyme
  • 2 leaves bay leaves
  • 4 sprigs parsley
  • 2 sprigs oregano
  • to taste salt
  • 4 pieces chicken thighs
  • to taste salt and pepper
  • 8 ounces thick bacon, cut up
  • 12 ounces smoked sausage
  • 1 medium onion, chopped
  • 1 tablespoon minced garlic
  • 2 sticks celery, diced
  • 1 14.5 oz. can crushed tomatoes
  • 2 large carrots, sliced thickly
  • 2 cups chicken broth
  • 1 cup white wine

Crumb Topping

  • 1 tablespoon butter
  • 1 tablespoon minced garlic
  • 2 cups bread crumbs
  • 2 tablespoons chopped parsley

Instructions

  1. Rinse and soak the beans overnight or for 6-8 hours.
  2. Drain the soaked beans, add fresh herbs, salt, and water, then cook for about 30 minutes until tender.
  3. Preheat the oven to 350°F if using the baking method.
  4. Season chicken thighs with salt and pepper, then brown them in a skillet.
  5. Cook bacon until crispy, then add sausages and cook through. Set aside.
  6. In the same pan, sauté onion, garlic, celery, thyme, bay leaves, and oregano for a few minutes.
  7. Add crushed tomatoes, beans, carrots, chicken broth, and white wine to the pot.
  8. Nestle the bacon, sausages, and chicken thighs among the beans, cover, and bring to a boil.
  9. Simmer for about 50 minutes on the stovetop or bake covered for 45 minutes in the oven.
  10. Top with breadcrumb mixture and bake uncovered for an additional 30-45 minutes.
