Instructions
- Rinse and soak the beans overnight or for 6-8 hours.
- Drain the soaked beans, add fresh herbs, salt, and water, then cook for about 30 minutes until tender.
- Preheat the oven to 350°F if using the baking method.
- Season chicken thighs with salt and pepper, then brown them in a skillet.
- Cook bacon until crispy, then add sausages and cook through. Set aside.
- In the same pan, sauté onion, garlic, celery, thyme, bay leaves, and oregano for a few minutes.
- Add crushed tomatoes, beans, carrots, chicken broth, and white wine to the pot.
- Nestle the bacon, sausages, and chicken thighs among the beans, cover, and bring to a boil.
- Simmer for about 50 minutes on the stovetop or bake covered for 45 minutes in the oven.
- Top with breadcrumb mixture and bake uncovered for an additional 30-45 minutes.
