Ingredients

The beans

  • 3 cups Haricots Tarbais beans
  • 1 cup dried fava beans

The meats

  • 4 pieces Toulouse sausage
  • 4 pieces duck confit
  • 1 cup bacon

The fat

  • 1 cup duck fat

Instructions

  1. Soak the beans overnight.
  2. Prepare the duck confit and fry it until crispy.
  3. Layer the beans, sausage, and duck confit in a cassole.
  4. Add duck fat and cover with water.
  5. Bake in the oven until the beans are tender and the flavors meld.
  6. Serve hot, optionally with a side of bread.
