Dublin Coddle with Chicken Sausage

Ingredients

The base

  • 8 slices bacon
  • 2 pounds chicken sausage
  • 2 large onions
  • 3 cloves garlic
  • 1 ½ cups carrots
  • 2 pounds potatoes

The seasonings

  • 1 tablespoon parsley
  • 1 teaspoon thyme
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper

The liquids

  • ½ cup chicken broth
  • ½ cup Guinness

Instructions

  1. Preheat the oven to 350°F.
  2. Cook the bacon in a skillet until crispy, then transfer to a paper towel-lined plate.
  3. Sear the sausages in the same skillet for 3 to 4 minutes on each side, then remove them.
  4. Deglaze the pan with Guinness or chicken stock, scraping up the bits from the bottom.
  5. Add sliced onions and garlic to the skillet and season with half of the salt, pepper, thyme, and parsley.
  6. Return the chicken sausage and chicken stock to the pan.
  7. Layer the potatoes, carrots, and bacon on top of the sausages.
  8. Add the remaining seasonings, cover, and bake in the oven for 1 hour and 15 minutes.
  9. Check that the potatoes are fork-tender, then serve with crusty bread.
