Slow Cooker Sausage, Cabbage, and Potatoes

Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 5 small/medium Yukon gold potatoes, cut into ¾ inch pieces
  • 12 ounces smoked turkey sausage (such as kielbasa)
  • teaspoons kosher salt
  • teaspoons dried oregano
  • 1 teaspoon ground black pepper
  • ¼ cup water
  • 5 cups cabbage, chopped (about 1 large head)
  • 1 cup chopped roasted red bell peppers from a jar

Instructions

  1. Melt butter with olive oil in a large pot over medium heat.
  2. Sauté onions until softened, then add garlic and cook until fragrant.
  3. Stir in potatoes, sausage, salt, oregano, and pepper, cooking until the sausage begins to brown.
  4. Transfer the mixture to a slow cooker, add water, and cover.
  5. Cook on LOW for 6-8 hours.
  6. In the last 30 minutes, add cabbage and red bell peppers.
  7. Serve warm.
