Ingredients

The main ingredients

  • tablespoons extra-virgin olive oil
  • pounds Italian turkey sausage links
  • 1 large yellow onion
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 4 cloves garlic
  • ¼ teaspoon red pepper flakes
  • ¼ cup dry red or white wine
  • 1 large bell pepper
  • 1 28-ounce can crushed tomatoes

For serving

  • to taste cooked whole wheat pasta
  • to taste zucchini noodles
  • to taste split and toasted hoagie buns

Instructions

  1. Coat the slow cooker with nonstick spray.
  2. In a skillet, heat ½ tablespoon of oil and brown half of the sausages on all sides.
  3. Transfer the browned sausages to the slow cooker.
  4. Repeat browning with the remaining sausages.
  5. In the skillet, add the remaining oil, onions, water, salt, and pepper, cooking until the onions start to brown.
  6. Add garlic and red pepper flakes, cooking for an additional minute, then add wine and let it evaporate.
  7. Transfer the onion mixture to the slow cooker with the sausages.
  8. Add bell peppers and crushed tomatoes to the slow cooker.
  9. Cover and cook on low for 5 to 6 hours or high for 2 to 3 hours until sausages are tender.
  10. Serve over pasta or in rolls with cheese.
