Ingredients

The banana bars

  • ½ cup butter, softened
  • cups granulated sugar
  • 2 large eggs
  • 1 cup sour cream or plain yogurt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon table salt
  • 1 teaspoon cinnamon (optional)
  • 1 cup ripe mashed banana

The cream cheese icing

  • 8 ounces cream cheese, softened
  • 1 stick butter, softened
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and grease a 15 x 10 x 1 inch jelly roll pan.
  2. Cream together the sugar and butter until light and fluffy.
  3. Mix in the sour cream (or yogurt), eggs, and vanilla until well combined.
  4. Whisk the dry ingredients together and gradually add to the wet mixture.
  5. Fold in the mashed banana until just combined and spread the batter in the prepared pan.
  6. Bake for 20-25 minutes until a knife inserted comes out clean, then cool completely.
  7. For the icing, whip together the cream cheese, butter, vanilla, almond extract, and powdered sugar until light and fluffy.
  8. Once the bars are cool, spread the icing on top and cut into bars.
