Ingredients

  • 1 cup mashed ripe banana (about 3 medium bananas)
  • cup coconut sugar
  • 3 tablespoons unsalted butter (melted and cooled to room temperature)
  • 2 tablespoons unsweetened almond milk (or milk of choice)
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ¾ cup white whole wheat flour
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • ¼ teaspoon kosher salt
  • cup plus 2 tablespoons dark or semi-sweet chocolate chips (divided)

Instructions

  1. Preheat the oven to 350°F and line an 8x8 inch baking pan with parchment paper.
  2. Mash the bananas in a bowl and mix in the coconut sugar, melted butter, milk, egg, and vanilla until well combined.
  3. In a separate bowl, combine the flour, baking soda, cinnamon, nutmeg, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until just combined, then fold in ⅓ cup of chocolate chips.
  5. Pour the batter into the prepared baking pan and sprinkle the remaining chocolate chips on top.
  6. Bake for 16 to 20 minutes until a toothpick comes out clean.
  7. Cool completely, then cut into bars and enjoy.
