Ingredients

The bars

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • teaspoon salt
  • ½ cup butter, softened
  • 2 cups granulated sugar
  • 3 large eggs
  • cups mashed ripe banana
  • 2 teaspoons vanilla extract

The frosting

  • 1 package (8 ounces) cream cheese, softened
  • ½ cup butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and coat a jelly roll pan with nonstick cooking spray.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large mixing bowl, cream butter and sugar until pale and fluffy, then add eggs and mix well.
  4. Incorporate mashed banana and vanilla, then gradually mix in the dry ingredients until combined.
  5. Spread the batter into the prepared pan and smooth the top.
  6. Bake for 20 to 25 minutes until a toothpick comes out clean, then cool completely.
  7. For the frosting, beat cream cheese and butter until smooth, then gradually add powdered sugar and vanilla.
  8. Spread the frosting over the cooled bars and cut into squares to serve.
