Instructions
- Preheat the oven to 350ºF and line an 8-inch square baking pan with parchment paper.
- Mash the bananas until smooth and measure out ⅔ cup.
- In a large bowl, combine the mashed banana with the eggs, peanut butter, olive oil, oat flour, coconut sugar, baking powder, cinnamon, and salt, and mix until smooth.
- Fold in the chocolate chips and pour the batter into the prepared pan, spreading it evenly.
- Sprinkle a few extra chocolate chips on top and bake for 30 minutes.
- Let the bars cool for at least 1 hour before cutting them into 16 squares.
