Ingredients

The bars

  • 1 cup gluten free oat flour
  • ½ cup blanched almond flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup Greek yogurt
  • cup creamy natural almond butter
  • cup coconut sugar
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • 2 medium ripe bananas, mashed

Frosting Options

  • to taste cashew cream cheese frosting or coconut cream frosting

Toppings

  • to taste chopped nuts
  • to taste chocolate chips
  • to taste sliced banana

Instructions

  1. Preheat the oven to 350°F and grease an 8x8 cake pan.
  2. Whisk together the oat flour, almond flour, baking powder, and salt in a medium bowl.
  3. In a large bowl, mix the yogurt, nut butter, sugar, eggs, and vanilla until creamy, then beat in the mashed bananas.
  4. Combine the dry ingredients with the wet ingredients until just incorporated.
  5. Pour the batter into the prepared pan and bake for 25 to 30 minutes until a knife comes out clean.
  6. Let the bars cool completely before spreading frosting on top.
  7. Add toppings as desired and slice into bars.
