  • 4 eggs eggs
  • ΒΌ cup soy sauce
  • 2 tablespoons avocado oil
  • 1 teaspoon toasted sesame oil
  • 1 pound boneless skinless chicken thighs
  • 1 cup shredded carrots
  • 1 cup chopped red onion
  • 1 cup chopped green beans
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon minced garlic
  • 4 cups cooked rice

For serving

  • to taste chopped cashews
  • to taste chili oil
  • to taste sesame seeds

Instructions

  1. Whisk together the eggs and 1 teaspoon of soy sauce in a bowl.
  2. Heat the Blackstone grill to medium low and add the avocado oil.
  3. Drizzle sesame oil over the oil and add the eggs, scrambling until set, then chop and set aside.
  4. Add chicken, carrots, red onion, and green beans to the grill, sprinkling with 1 tablespoon of soy sauce, ginger, and garlic, and cook until chicken is done.
  5. Stir in the cooked rice and remaining soy sauce, cooking for 4 minutes while stirring frequently.
  6. Add the chopped egg back to the mixture and cook for another minute.
  7. Season with salt and pepper, then top with cashews, chili oil, and sesame seeds before serving.
