Instructions
- Heat the Blackstone griddle to medium-low and add the avocado oil.
- Add the beaten eggs and cook until set, then remove and chop them.
- Add the diced bell pepper, onion, and grated carrot to the griddle.
- Stir in 1 tablespoon of soy sauce and the minced ginger, cooking until the vegetables are crisp-tender.
- Add the cooked rice along with the remaining soy sauce, sesame oil, and red pepper flakes, cooking for about 3 minutes while stirring frequently.
- Return the chopped eggs to the griddle and cook for an additional 2 minutes.
- Season with salt and pepper, and serve topped with scallions and sesame seeds.
