Ingredients

The base

  • 4 cups cooked jasmine rice
  • 3 large eggs

The vegetables

  • 1 tablespoon avocado oil
  • 1 bell pepper diced
  • 1 red onion diced
  • 1 carrot peeled and grated

The flavorings

  • ¼ cup soy sauce
  • 1 tablespoon minced ginger
  • ½ teaspoon sesame oil
  • ¼ teaspoon red pepper flakes
  • to taste salt and pepper

For serving

  • to taste chopped scallions
  • to taste sesame seeds

Instructions

  1. Heat the Blackstone griddle to medium-low and add the avocado oil.
  2. Add the beaten eggs and cook until set, then remove and chop them.
  3. Add the diced bell pepper, onion, and grated carrot to the griddle.
  4. Stir in 1 tablespoon of soy sauce and the minced ginger, cooking until the vegetables are crisp-tender.
  5. Add the cooked rice along with the remaining soy sauce, sesame oil, and red pepper flakes, cooking for about 3 minutes while stirring frequently.
  6. Return the chopped eggs to the griddle and cook for an additional 2 minutes.
  7. Season with salt and pepper, and serve topped with scallions and sesame seeds.
