Slow Cooker Mashed Potatoes

Ingredients

The potatoes

  • 4-5 pounds russet or Yukon gold potatoes, peeled and cut into ½-inch pieces
  • 2 cloves garlic, smashed
  • 1 ½ teaspoons coarse, kosher salt
  • ¼ teaspoon black pepper
  • 1 cup milk
  • ½ cup chicken broth, low-sodium

For mashing

  • cup milk, if needed
  • 2-3 tablespoons butter
  • 2 ounces cream cheese, softened (or ¼ cup sour cream)
  • to taste salt and pepper

Instructions

  1. Grease the slow cooker insert with nonstick cooking spray.
  2. Add the potatoes, garlic, salt, pepper, milk, and broth, and stir to combine.
  3. Cover and cook on high for 3-4 hours until the potatoes are very tender.
  4. Uncover the slow cooker, remove the garlic cloves, and add additional milk, butter, and cream cheese.
  5. Mash until creamy and adjust salt and pepper to taste.
  6. Cover and keep on low or warm until ready to serve.
