Slow Cooker Mashed Potatoes

Ingredients

The potatoes

  • 5 pounds russet potatoes, peeled and cut into 1-inch pieces

The mixture

  • cups milk
  • 1 cup butter (2 sticks)
  • ½ cup sour cream
  • 1 tablespoon salt
  • to taste freshly ground black pepper
  • to taste fresh chives (optional)

Instructions

  1. Add the potatoes and milk to the bottom of a slow cooker.
  2. Sprinkle with salt and top with butter.
  3. Cover and cook on HIGH for 3 to 4 hours, stirring once every hour.
  4. Remove the cover and mash the potatoes until uniform.
  5. Fold in the sour cream and season with salt and pepper to taste.
  6. Garnish with chives if desired.
