Ingredients

The potatoes

  • 4 lbs russet potatoes, peeled and cut into 1-inch cubes

The liquid

  • 2 ½ cups water
  • 2 cups low-sodium chicken broth

The flavorings

  • Salt to taste salt
  • ½ cup unsalted butter, melted
  • ¾ cup half and half, heated

Instructions

  1. Add chicken broth and water to the slow cooker, then add the potatoes to prevent browning.
  2. Season the mixture with salt to taste.
  3. Cover and cook on high for 2 ¾ to 3 ½ hours until the potatoes are tender.
  4. Drain the potatoes and mash them in the slow cooker or use a ricer for a smoother texture.
  5. Stir in the warmed butter and half and half, adjusting seasoning as needed, and serve warm.
