Cheesy Baked Ziti

Instructions
- 1. Preheat oven to 400°F and adjust the oven rack to the middle position.
- 2. In a small bowl, mix ricotta, olive oil, salt, and pepper.
- 3. In another bowl, combine mozzarella and Parmesan cheeses.
- 4. Boil water in a large pot, add ziti and salt, and cook until noodles just begin to soften.
- 5. Reserve 1 ½ cups of pasta cooking water, then drain the pasta.
- 6. In the same pot, heat olive oil, garlic, and red pepper flakes until fragrant, then add crushed tomatoes and simmer for 15 minutes.
- 7. Stir in reserved pasta water and cooked pasta into the sauce.
- 8. In a baking dish, layer half of the pasta, dollop ricotta mixture, then add the remaining pasta.
- 9. Top with mozzarella and Parmesan mixture.
- 10. Bake for 25-35 minutes until golden and bubbly, then cool for 15-20 minutes before serving.
