Cheesy Baked Ziti

Ingredients

Ricotta Mixture + Cheese

  • 1 ½ cups ricotta cheese
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 3 cups shredded mozzarella cheese
  • 1 ½ cups grated Parmesan cheese

Ziti + Sauce

  • 1 ½ pounds uncooked ziti noodles
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • ¼ teaspoon red pepper flakes
  • 2 cans (28-ounces each) crushed tomatoes
  • ¼ cup chopped fresh basil

Instructions

  1. 1. Preheat oven to 400°F and adjust the oven rack to the middle position.
  2. 2. In a small bowl, mix ricotta, olive oil, salt, and pepper.
  3. 3. In another bowl, combine mozzarella and Parmesan cheeses.
  4. 4. Boil water in a large pot, add ziti and salt, and cook until noodles just begin to soften.
  5. 5. Reserve 1 ½ cups of pasta cooking water, then drain the pasta.
  6. 6. In the same pot, heat olive oil, garlic, and red pepper flakes until fragrant, then add crushed tomatoes and simmer for 15 minutes.
  7. 7. Stir in reserved pasta water and cooked pasta into the sauce.
  8. 8. In a baking dish, layer half of the pasta, dollop ricotta mixture, then add the remaining pasta.
  9. 9. Top with mozzarella and Parmesan mixture.
  10. 10. Bake for 25-35 minutes until golden and bubbly, then cool for 15-20 minutes before serving.
