Chimichurri Sauce

Ingredients

  • 1 bunch fresh parsley (stems removed)
  • ½ cup fresh cilantro leaves
  • ¼ cup fresh oregano leaves
  • 4 cloves garlic (peeled)
  • 3 tablespoons white vinegar
  • ¼ teaspoon ground cumin
  • ¼ teaspoon red chili flakes
  • ½ cup olive oil
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Add parsley, cilantro, oregano, garlic, vinegar, cumin, and pepper flakes to a food processor or blender.
  2. Pulse until finely chopped, about 3 to 5 times, then scrape down the sides.
  3. With the motor running, slowly drizzle in the olive oil until a thick sauce forms, about 20 to 30 seconds.
  4. Season to taste with salt and pepper.
