Chimichurri Sauce

Ingredients

Herbs and Vegetables

  • cups fresh parsley
  • ½ cup fresh cilantro
  • ¼ cup fresh oregano
  • ¼ small red onion
  • 3 cloves garlic

Liquids and Seasonings

  • 3 Tbsp red wine vinegar
  • 2 Tbsp fresh lemon juice
  • ½ tsp salt
  • ¼ tsp red pepper flakes
  • ¾ cup olive oil

Instructions

  1. Finely chop the parsley, cilantro, oregano, onion, and garlic.
  2. Combine all the chopped ingredients in a mixing bowl along with the remaining ingredients and stir to blend.
  3. Alternatively, for a food processor method, add the onion, garlic, red wine vinegar, lemon juice, and salt to the processor and pulse until finely minced.
  4. Add the parsley, cilantro, oregano, and red pepper flakes, then pour in the olive oil while pulsing until the herbs are finely minced.
  5. Serve over meat, poultry, seafood, or vegetables, or use as a marinade.
