Ingredients

  • 1 cup fresh Italian parsley, packed
  • 3-4 cloves garlic
  • ½ medium red onion
  • ½ medium red bell pepper
  • ½ teaspoon dried crushed red pepper
  • ½ cup olive oil
  • 2 tablespoons red wine vinegar
  • ½ teaspoon black pepper, freshly ground
  • ½ tablespoon dried oregano
  • ½ teaspoon kosher salt

Instructions

  1. Wash and finely chop the parsley, garlic, onions, and red bell pepper, then place them in a small bowl.
  2. In another bowl, combine olive oil, red wine vinegar, black pepper, and oregano, stirring thoroughly.
  3. Pour the olive oil mixture into the parsley mixture and mix until well blended, adjusting seasonings to taste.
  4. Allow the sauce to sit for about 30 minutes to release flavors, preferably for 2 hours before serving.
