Spiced Tomato-Braised Fish

The bread
Instructions
- 1. Season the fish with salt and heat 2 Tbsp. of oil in a Dutch oven over medium heat. Cook the onion and garlic until softened.
- 2. Add the cinnamon stick, garam masala, cumin seeds, and black pepper. Cook until fragrant.
- 3. Stir in the tomato purée, sugar, remaining salt, and water. Bring to a simmer.
- 4. Carefully add the fish and cook until flaky but firm, about 8–12 minutes. Remove from heat and season with more pepper.
- 5. In a separate skillet, heat 1 Tbsp. of oil and fry 2 slices of bread until golden brown. Repeat with the remaining slices.
- 6. Serve the braised fish with the fried bread.
