Spiced Tomato-Braised Fish

Ingredients

The fish

  • 2 lb. skinless cod, haddock, or halibut, cut into 3" pieces
  • 1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt

The sauce

  • 4 Tbsp. extra-virgin olive oil, divided
  • 1 onion finely chopped
  • 3 cloves garlic, finely chopped
  • 1 3" cinnamon stick
  • 1 Tbsp. garam masala
  • 1 tsp. cumin seeds
  • ½ tsp. freshly ground black pepper
  • 1 28-oz. can tomato purée
  • 1 tsp. sugar

The bread

  • 4 slices sourdough bread

Instructions

  1. 1. Season the fish with salt and heat 2 Tbsp. of oil in a Dutch oven over medium heat. Cook the onion and garlic until softened.
  2. 2. Add the cinnamon stick, garam masala, cumin seeds, and black pepper. Cook until fragrant.
  3. 3. Stir in the tomato purée, sugar, remaining salt, and water. Bring to a simmer.
  4. 4. Carefully add the fish and cook until flaky but firm, about 8–12 minutes. Remove from heat and season with more pepper.
  5. 5. In a separate skillet, heat 1 Tbsp. of oil and fry 2 slices of bread until golden brown. Repeat with the remaining slices.
  6. 6. Serve the braised fish with the fried bread.
