Instructions
- Preheat the oven to 350°F and spray a 13 by 9-inch baking dish with non-stick cooking spray.
- In a small bowl, whisk together melted butter, honey, cinnamon, and salt.
- Place the diced sweet potatoes in the baking dish and pour the honey butter mixture over them, tossing to coat evenly.
- Spread the sweet potatoes into an even layer and bake for about 50 to 55 minutes, tossing twice during baking.
- Toss the sweet potatoes with any extra honey mixture left in the pan before serving warm.
