Ingredients

The dip

  • 1 can refried pinto beans (16-ounce)
  • ½ cup sour cream or whole milk Greek yogurt
  • 1 can diced green chiles (4-ounce, drained)
  • 1 to 2 teaspoons taco seasoning
  • cup grated cheddar cheese or Mexican cheese blend
  • 1 wedge lime (for squeezing)

For serving

  • to taste tortilla chips
  • to taste halved cherry tomatoes or diced plum tomatoes
  • to taste thinly sliced green onions
  • to taste thinly sliced jalapeño or serrano peppers
  • to taste sliced or diced avocado
  • to taste Cotija cheese
  • to taste chopped fresh cilantro

Instructions

  1. Preheat the oven to 375°F and oil an 8x8-inch baking dish or 8-inch oven-safe skillet.
  2. In a medium bowl, stir together the refried beans, sour cream, green chiles, and 1 teaspoon taco seasoning. Adjust seasoning to taste.
  3. Transfer the mixture to the prepared pan and spread it evenly. Top with cheese.
  4. Bake for 20 to 25 minutes until the cheese is melted and the dip is bubbling.
  5. Let cool for 5 minutes, then add desired toppings, squeeze with lime juice, and serve with tortilla chips.
