Bean Dip

Ingredients

  • tablespoons olive oil
  • ½ medium white onion, minced
  • 2 cloves garlic, minced
  • pinch salt
  • 2 tablespoons canned jalapeños or green chiles
  • 1 15-oz. can refried beans
  • 1 15-oz. can pinto beans, drained and rinsed
  • ½ cup full-fat Greek yogurt
  • 1 tablespoon taco seasoning
  • 2 tablespoons salsa
  • 1 cup shredded cheddar cheese, divided

Instructions

  1. Preheat the oven to 400ºF.
  2. Heat olive oil in a small oven-safe pot over medium/high heat, then sauté onion, garlic, and salt until the onions are translucent.
  3. Add the remaining ingredients (except cheese) and mix, heating until hot. Then, add half of the cheese and mix until melted.
  4. Transfer to a casserole dish if desired, sprinkle the remaining cheese on top, and bake for 5 minutes, optionally broiling for 1-3 minutes until the cheese fully melts.
