Crab Salad Stuffed Avocados

Ingredients

The salad

  • 8 ounces crabmeat
  • cup crémé fraiche
  • ¼ cup celery, chopped fine
  • 2 tablespoons red onion, minced
  • 2 tablespoons red bell pepper, minced
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon fresh lemon juice
  • 1 ounce finely grated Swiss cheese
  • ½ teaspoon kosher salt
  • ¼ teaspoon fresh ground pepper

The avocados

  • 3 whole avocados
  • ¼ cup chopped pistachios

Instructions

  1. Drain the liquid from the crab meat until it's dry and flaky.
  2. In a medium bowl, mix the crab meat with crémé fraiche, celery, red onion, red bell pepper, mint, and lemon juice.
  3. Stir in the Swiss cheese and season with kosher salt and pepper.
  4. Split the avocados in half and remove the pit.
  5. Spoon ⅓ cup of the crab mixture into each avocado half.
  6. Sprinkle with chopped pistachios and additional mint if desired.
