Instructions
- Drain and rinse the chickpeas, then dry them with a paper towel and remove any loose skins.
- In a food processor, combine chickpeas, almond butter, vanilla extract, maple syrup, cocoa powder, chia seeds, and peppermint oil. Blend until smooth and creamy.
- Transfer the cookie dough mixture to a bowl and fold in the chocolate chips.
- Chill the dough in the refrigerator before serving.
