Ingredients

  • 1 can chickpeas, drained and rinsed
  • ½ cup almond butter
  • tablespoons cocoa powder
  • 2 teaspoons vanilla extract
  • 3 tablespoons maple syrup
  • 1 tablespoon ground chia seeds
  • ¼ teaspoon peppermint oil (or extract)
  • cup 60% cacao chocolate chips or cocoa nibs

Instructions

  1. Drain and rinse the chickpeas, then dry them with a paper towel and remove any loose skins.
  2. In a food processor, combine chickpeas, almond butter, vanilla extract, maple syrup, cocoa powder, chia seeds, and peppermint oil. Blend until smooth and creamy.
  3. Transfer the cookie dough mixture to a bowl and fold in the chocolate chips.
  4. Chill the dough in the refrigerator before serving.
