Ingredients

  • 1 Tbsp fresh parsley, chopped
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp extra-virgin olive oil
  • tsp crushed red pepper
  • 1 small garlic clove, minced
  • 1 15 oz. can chickpeas, rinsed and drained

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, crushed red pepper, garlic, and parsley.
  2. Toss in the chickpeas and cover the bowl.
  3. Allow the salad to marinate for about 30 minutes at room temperature.
  4. Serve and enjoy!
