Ingredients

The chicken

  • 8 ounces boneless, skinless chicken breasts, cut into large cubes

The coating

  • 1 cup low-fat plain Greek yogurt
  • ½ teaspoon salt, divided
  • ¼ cup dried bread crumbs or Panko
  • ½ teaspoon garlic powder

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix the yogurt and ¼ teaspoon of salt, then add the chicken and toss to coat.
  3. In a separate bowl, combine the bread crumbs, garlic powder, and the remaining ¼ teaspoon of salt.
  4. Dredge the coated chicken in the bread crumb mixture until evenly coated.
  5. Place the chicken on the prepared baking sheet and bake for 12–15 minutes or until cooked through.
  6. Serve hot.
