Ingredients

Coconut Oat Layer

  • 2 cups old fashioned rolled oats
  • ½ cup milk of choice
  • ½ cup unsweetened shredded coconut
  • 2 Tbsp honey (or other sticky sweetener)
  • 1 tsp vanilla extract
  • a pinch salt

Raspberry Chia Jam Layer

  • 2 cups raspberries (fresh or frozen, defrosted)
  • ½ cup chia seeds

Chocolate Probiotic Prune Layer

  • 1 bag (~25) Mariani Probiotic Pitted Prunes
  • ¼ cup milk of choice
  • ¼ cup old fashioned rolled oats
  • 1 Tbsp unsweetened cocoa powder
  • ½ tsp vanilla extract
  • ¼ cup mini chocolate chips

Instructions

  1. Mix the coconut oat layer ingredients in a bowl and set aside.
  2. Blend the raspberries and chia seeds until smooth for the raspberry chia jam layer and set aside.
  3. Blend the chocolate probiotic prune layer ingredients until smooth and fold in chocolate chips.
  4. Layer the coconut oats, raspberry jam, and chocolate prune mixture in mason jars.
  5. Cover and refrigerate overnight to thicken.
  6. Grab a jar in the morning and enjoy!
