Instructions
- In a large bowl, mix together the coconut milk, maple syrup, and vanilla extract.
- Add the rolled oats and stir until combined.
- Divide half of the oat mixture into jars, then add a layer of raspberries.
- Top with the remaining oat mixture and more raspberries.
- Sprinkle mini chocolate chips on top.
- Refrigerate overnight.
- Serve cold in the morning or heat briefly on the stovetop.
