Ingredients

The oats

  • 1 cup rolled oats
  • 2 tablespoons chia seeds

The liquid

  • 13.5 ounces canned full-fat coconut milk
  • ½ teaspoon vanilla extract

The fruit

  • 1 cup frozen blueberries
  • shredded coconut to taste for topping

The sweetener

  • 2 tablespoons maple syrup or agave syrup

Instructions

  1. Blend the coconut milk and frozen blueberries until smooth.
  2. Divide the mixture and other ingredients between two pint-sized jars.
  3. Stir to combine all ingredients in each jar.
  4. Cover the jars and refrigerate for at least 3 hours or overnight.
  5. Before serving, stir and add additional milk or sweetener if desired.
  6. Top with extra blueberries and shredded coconut before enjoying.
