Ingredients

Coconut Oat Layer

  • 2 cups old fashioned rolled oats
  • ½ cup milk of choice
  • ½ cup unsweetened shredded coconut
  • 2 Tbsp honey (or other sticky sweetener)
  • 1 tsp vanilla extract
  • a pinch salt

Raspberry Chia Jam Layer

  • 2 cups raspberries (fresh or frozen, defrosted)
  • ½ cup chia seeds

Chocolate Probiotic Prune Layer

  • 1 bag (~25) Mariani Probiotic Pitted Prunes
  • ¼ cup + 1 Tbsp milk of choice
  • ¼ cup old fashioned rolled oats
  • 1 Tbsp unsweetened cocoa powder
  • ½ tsp vanilla extract
  • ¼ cup mini chocolate chips

Instructions

  1. Mix the coconut oat layer ingredients in a bowl and set aside.
  2. Blend the raspberries and chia seeds until smooth for the raspberry chia jam layer, then set aside.
  3. Blend the chocolate probiotic prune layer ingredients until smooth, scraping down the sides as needed.
  4. Fold in the chocolate chips into the chocolate prune mixture.
  5. Layer the mixtures in mason jars and refrigerate overnight.
  6. Grab a jar in the morning and enjoy!
