Cucumber and Tomato Salad

Ingredients

The salad

  • 1 long English cucumber
  • 12 ounces cherry or grape tomatoes
  • ½ small red onion
  • 2 tablespoons fresh basil

The dressing

  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar or lemon juice
  • ½ teaspoon sugar
  • teaspoons Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper or red pepper flakes

Optional

  • cup crumbled vegan feta

Instructions

  1. Cut the cucumber into half-inch thick slices and then cut each slice into quarters.
  2. In a medium bowl, combine the cucumbers, halved tomatoes, thinly sliced red onion, and torn or sliced basil.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar or lemon juice, sugar, Italian seasoning, salt, and black pepper or red pepper flakes.
  4. Pour the dressing over the salad and toss to coat the vegetables.
  5. Add the crumbled vegan feta if using, and toss again. Adjust seasoning if necessary and serve cold.
