Cucumber and Tomato Salad

Instructions
- Cut the cucumber into half-inch thick slices and then cut each slice into quarters.
- In a medium bowl, combine the cucumbers, halved tomatoes, thinly sliced red onion, and torn or sliced basil.
- In a small bowl, whisk together the olive oil, balsamic vinegar or lemon juice, sugar, Italian seasoning, salt, and black pepper or red pepper flakes.
- Pour the dressing over the salad and toss to coat the vegetables.
- Add the crumbled vegan feta if using, and toss again. Adjust seasoning if necessary and serve cold.
