Ground Beef Taco Soup

Ingredients

The soup

  • 2 tsp Avocado or Olive Oil
  • ½ cup chopped Yellow Onion
  • 8 oz Lean Ground Beef
  • 1 cup diced Roma Tomatoes or Cherry Tomatoes
  • 1 small Jalapeño, finely chopped (optional)
  • 2 cloves Garlic, minced
  • 1 can Black Beans, drained
  • ½ cup frozen Corn
  • 3 cups Low Sodium Beef Broth
  • 1 tbsp fresh Lime Juice
  • 2 tbsp finely chopped fresh Cilantro
  • Salt to taste

Homemade Taco Seasoning

  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Smoked Paprika
  • ½ tsp Mexican Oregano
  • ½ tsp Kosher Salt

Optional Toppings

  • Sour Cream or Greek Yogurt
  • Shredded Cheddar Cheese
  • chopped Green Onions or Red Onion
  • finely chopped Cilantro
  • Tortilla Chips or Corn Chips
  • Hot Sauce

Instructions

  1. Make the taco seasoning by combining chili powder, cumin, smoked paprika, Mexican oregano, and salt in a bowl.
  2. Heat oil in a saucepan, add chopped onion, and cook until softened.
  3. Add the seasoning to the onions and cook for about a minute, then add the ground beef and brown it.
  4. Stir in the tomatoes, garlic, and jalapeño, cooking until the tomatoes are softened.
  5. Add black beans, corn, and beef broth, bring to a simmer, and cook for about 20 minutes.
  6. Stir in lime juice and cilantro, then season to taste with salt.
  7. Serve the soup topped with your favorite toppings.
