Ingredients

For the Overnight Oats

  • ½ cup pumpkin puree
  • ¼ cup Greek yoghurt
  • ¾ cup milk (almond, oat, or other)
  • 1 tablespoon maple syrup
  • ½ teaspoon orange zest
  • 1 cup old fashioned rolled oats
  • 1 tablespoon chia seeds
  • ½ teaspoon pumpkin spice or ground cinnamon

Toppings (optional)

  • Greek yoghurt
  • pumpkin spice or ground cinnamon

Instructions

  1. Combine pumpkin puree, milk, yoghurt, maple syrup, and orange zest in a large bowl and mix until smooth.
  2. Add oats, pumpkin spice, and chia seeds, and stir to combine.
  3. Cover and refrigerate for at least 6 hours or overnight.
  4. Serve with toppings of your choice and additional milk if needed.
