Ingredients

The mushrooms

  • 1 ½ pounds fresh mushrooms

The filling

  • 2 6-ounce cans crab meat
  • 5 pieces green onions, thinly sliced
  • 1 teaspoon Italian seasoning
  • 1-2 cloves garlic, minced
  • to taste freshly ground black pepper
  • 10 tablespoons mayonnaise
  • ¼ cup grated parmesan cheese
  • 2-4 tablespoons additional parmesan cheese for topping

Instructions

  1. Preheat the oven to 350°F.
  2. Clean the mushrooms and remove the stems, then scoop out the gills to create deep cups.
  3. In a medium bowl, combine crab meat, green onions, Italian seasoning, garlic, and pepper.
  4. Mix in mayonnaise and ¼ cup of parmesan cheese until well combined, then refrigerate the filling.
  5. Sprinkle salt over the mushroom cups and fill them with rounded teaspoonfuls of the crab filling.
  6. Place the filled mushrooms in an ungreased shallow baking dish and sprinkle additional parmesan on top.
  7. Bake in the preheated oven for 20 minutes, then switch to broil for 2-3 minutes to brown the tops, watching carefully to avoid burning.
  8. Remove from the oven and serve immediately.
