Ingredients

The mushrooms

  • 12 ounce button mushrooms

The filling

  • 2 cloves garlic, minced
  • 1 cup panko breadcrumbs
  • 2-3 tablespoons butter (divided)
  • 1 piece green onion, diced
  • ¼ cup diced onion
  • 2 tablespoons fresh parsley, finely chopped
  • ¼ cup diced celery sticks
  • ¼ cup diced red pepper
  • ½ – 1 teaspoon cajun seasoning
  • 6 ounce crab meat
  • 2 ounce cream cheese
  • ½ cup grated gouda cheese
  • to taste salt

Instructions

  1. Clean the mushrooms and remove the stems.
  2. Drizzle the mushroom caps with oil, salt, and pepper, and place them on a lined baking sheet.
  3. In a skillet, heat garlic, then add breadcrumbs and sauté until fragrant and slightly brown.
  4. Transfer the breadcrumb mixture to a bowl and let it cool.
  5. In the same skillet, melt butter and sauté onions, green onions, celery, red pepper, cajun seasoning, and crab meat for a few minutes.
  6. Allow the mixture to cool, then add cream cheese, ¼ cup of breadcrumbs, and grated gouda cheese, mixing thoroughly.
  7. Spoon the filling into the mushroom caps and top with remaining breadcrumbs.
  8. Bake in the oven at 375°F for 15-20 minutes until golden brown.
