Crab Stuffed Mushrooms

Ingredients

Crab Imperial for stuffing

  • 1 lb lump crabmeat
  • ½ cup Hellman’s mayonnaise
  • 1 teaspoon old bay seasoning
  • 1 large egg, lightly beaten
  • ½ teaspoon fresh lemon juice
  • 1 teaspoon Italian parsley, finely chopped

Stuffed Mushrooms

  • 16-20 medium White button mushrooms or Baby Bella's, cleaned and cored
  • 2 ounces marsala wine or white wine (optional)

Instructions

  1. Mix mayonnaise, egg, old bay seasoning, lemon juice, and parsley in a bowl.
  2. Gently fold in the crabmeat, being careful not to break it up.
  3. Clean the mushrooms by wiping them with a damp paper towel and remove the stems.
  4. Slice a bit off the bottom of the mushroom caps to make them sit flat.
  5. Fill each mushroom cap with a tablespoon of the crab mixture.
  6. Place the stuffed mushrooms in a baking dish and add wine or vegetable stock to the bottom.
  7. Bake at 350°F for 20 minutes or until golden brown.
  8. Serve with lemon wedges.
