Ingredients

Cookie Dough

  • ½ cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg, room temperature
  • ½ teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • cup sour cream, room temperature
  • cups chopped cashews

Frosting

  • ½ cup unsalted butter
  • 3 tablespoons half and half cream
  • ¼ teaspoon vanilla extract
  • 2 cups confectioner's sugar
  • ½ cup cashew halves

Instructions

  1. Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. Cream together the butter and brown sugar in a stand mixer until smooth.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Incorporate the flour, baking powder, baking soda, and salt, mixing until combined.
  5. Add the sour cream and mix until fully incorporated.
  6. Fold in the chopped cashews gently.
  7. Drop tablespoons of dough onto the baking sheet, spacing them about 2 inches apart.
  8. Bake for 8 to 10 minutes until lightly browned and transfer to a cooling rack.
  9. Prepare the frosting by melting butter until lightly browned, then let it cool slightly.
  10. Stir in half and half cream, vanilla extract, and confectioners' sugar, beating until creamy.
  11. Frost the cooled cookies and top each with a cashew half.
