Instructions
- Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
- Cream together the butter and brown sugar in a stand mixer until smooth.
- Add the egg and vanilla extract, mixing until well combined.
- Incorporate the flour, baking powder, baking soda, and salt, mixing until combined.
- Add the sour cream and mix until fully incorporated.
- Fold in the chopped cashews gently.
- Drop tablespoons of dough onto the baking sheet, spacing them about 2 inches apart.
- Bake for 8 to 10 minutes until lightly browned and transfer to a cooling rack.
- Prepare the frosting by melting butter until lightly browned, then let it cool slightly.
- Stir in half and half cream, vanilla extract, and confectioners' sugar, beating until creamy.
- Frost the cooled cookies and top each with a cashew half.
