Cashew Butter Cookies

Instructions
- Preheat the oven to 350ºF and line a baking sheet with parchment paper.
- In a large bowl, mix the cashew butter, coconut sugar, eggs (or flax eggs), vanilla, baking soda, and salt until a sticky dough forms.
- If using chocolate chips, fold them into the dough.
- Drop rounded tablespoons of dough onto the prepared baking sheet and flatten slightly.
- Bake for 10-12 minutes until lightly golden around the edges.
- Let the cookies cool completely on the pan before serving.
