Ingredients

The Brownies

  • 1 bag Keto and Co Fudge Brownie Mix (10.2 ounces) or other keto brownie mix
  • as needed various ingredients to prepare brownies according to package instructions

The Peppermint Buttercream

  • 6 tablespoons butter (melted)
  • 2 ⅓ cups Confectioners Swerve
  • 3 tablespoons heavy cream
  • 1 teaspoon peppermint extract

The Chocolate Ganache

  • 6 tablespoons butter (at room temperature, cut into small squares)
  • 9 ounces sugar-free semi-sweet chocolate chips
  • 1 teaspoon peppermint extract

Optional Toppings

  • as needed various sugar-free candy canes or peppermint candies (crushed)

Instructions

  1. Preheat the oven to 350°F and line a 9x9 baking dish with parchment paper.
  2. Prepare the brownie mix according to the package instructions and transfer the batter to the baking dish.
  3. Bake for 30 minutes and allow the brownies to cool in the dish on a wire rack.
  4. In a large bowl, mix melted butter, Confectioners Swerve, heavy cream, and peppermint extract to make the buttercream.
  5. Once the brownies are completely cooled, spread the buttercream over the top.
  6. Chill the brownies in the refrigerator for 30 minutes.
  7. For the ganache, combine butter and chocolate chips in a microwave-safe bowl and microwave in 30-second bursts, stirring until smooth.
  8. Stir in peppermint extract and pour the ganache over the chilled buttercream, smoothing it out with a spatula.
  9. If desired, top with crushed candy canes or peppermint candies and chill until the ganache is hardened.
  10. Lift the brownies out of the dish using the parchment paper and slice into 16 pieces with a warm knife.
